Back in December Mum and I had an evening of Christmas decorating planned but of course we both arrived home from work famished so dinner was priority number one. Luckily we’d planned ahead; some relatively quick and easy sharing nachos seemed like the best idea so we could move swiftly onto the decorating. I did not expect them to be as good as they were, in fact I enjoyed them so much I decided I absolutely had to recreate them and share with you all so that you can get in on this too.
For the Nachos you will need:
(lots of) cheese
For the Guacamole:
Avacado (one large or 2 small)
juice of half a lime
chopped half a red onion
salt & pepper
coriander (as much as you like)
Multi tasking is key to this process: cook the chicken and add in your chosen fajita spice mix (I went for a Lidl one).
While the chicken is cooking layer your nachos and grated cheese, top with jalapeños and pop in the oven until the cheese ha melted.
While you’re waiting for that cheese to melt, squeeze the juice out of the half lime, add a pinch of salt and pepper.
Get the avocado out its shell and mash it up, make sure to leave some chunks.
Mix the chopped onion and coriander into the avocado and add the chopped tomato at the last minute.
Make yourself a margarita while waiting for the nachos to come out of the oven.
Grab the nachos, top with the cooked chicken and as much sour cream as you fancy and serve with your fresh guac!
Seriously homemade guacamole will change your life! I know that sounds pretty extreme but I never even used to like the stuff until I’d had the real deal, so don’t just take my word for it, try it out yourself! And if you want to mix things up do a little experimenting, add some chilli flakes for a little extra kick!
